Blueberry Pound Cake


There is only one thing better in the months of June and July than fresh blueberries--Blueberry Pound Cake. It's so easy and so good. Eat it with ice cream or have it for breakfast. It is truly one of life's simple pleasures. Enjoy!




1 c. softened butter

2 c. sugar

4 eggs

1 t. vanilla

3 c. flour

1/2 t. salt

1 t. baking powder

1 pt. fresh blueberries

Cream butter and sugar. Add eggs and vanilla. Mix in salt and baking powder. Stir in 2 c. of the flour. In a separate bowl, dredge blueberries in the last c. of flour. Then carefully fold in the blueberries and flour into the batter. Spoon into greased Bundt pan. Bake at 325 degrees for 1 hour and 15 minutes. Cool. Sprinkle with powdered sugar.

I LOVE pound cake, but unfortunately, berries is the one food I can not enjoy. I want to try one of my own though...perhaps folding in another fruit? mmmm..with cafe con leche!
